About Us
My name is Makyla Conklin and I am the owner of Mountain Minis and Elevated Elote. Growing up on a traveling carnival, owning my own food truck has always been a milestone of mine. After moving to the Vail Valley in 2013, I knew this would be a great place to make this dream a reality.
In the summer of 2020, I decided to open up my first food truck, Mountain Minis in the midst of the pandemic. With the help of my sister, husband, and family, we started booking events and it was a huge hit. After a successful first summer, we decided to open our second trailer, Elevated Elote.
Being able to combine my passion for food and this community has truly been a dream come true. Thank you all for your continued support, come check us out at our next event in the valley!
